MEATBALLS
- 1 teaspoon of dried onion powder
- 2 eggs
- 1 pound ground pork or turkey
- 1 1/2 pounds ground beef
- 2 teaspoons sea salt
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cardamom
- 2 teaspoons black pepper
GRAVY
- 4 Tbsp butter
- 2 cups beef stock
- 1/2 cup sour cream
- 1/2 cup heavy whipping cream
- Salt
DIRECTIONS
Mix all the meat ingredients together and form into balls. In a large frying pan melt 4 Tbsp of butter, lard or tallow, brown meatballs on all sides and set aside.
Add to the same pan 2 cups of beef stock, cook to reduce by 1/2. Add sour cream, heavy whipping cream and salt to taste. To make the gravy smooth, you can blend it with a stick blender or pour it into a blender. After blending put back in pan with meatballs, cover and simmer for 10 mins.
