Zero Carb Carnivore desserts are non-optimal and not one of us long time ZC veterans regularly eat these, but for people starting out, who are craving or just need something different, Zero Carb desserts are a much better option than carb filled desserts that will derail your progress. These are also a great treat for kids.
Zero Carb Coffee Mousse
Ingredients:
2 Cups full fat Ricotta cheese
1.5 Cups of Heavy Whipping Cream
2 Tbs instant Coffee/Espresso or Decaf coffee
1 Tbs plain beef gelatin
1/4 tsp vanilla
1/4 Cup water
Cinnamon, nutmeg, pumpkin pie spice or spice of your choice.
Directions:
Boil 1/4 Cup of water.
Mix, or food process Ricotta and vanilla.
Whip heavy cream until stiff peaks form. Set aside.
Mix 2 Tbs of the hot water with the Instant coffee granules.
Dissolve the gelatin in the rest of the water in a small bowl and set aside.
Pour the dissolved coffee into the bowl of Ricotta cheese, mix then stir in the gelatin.
Fold in 1 Cup of the whipped cream. (Save 1/2 cup for topping)
Chill for 1 hour.
Stir well then spoon into serving cups, or put into a piping bag, if you want to get fancy, and pipe into serving cups.
Top with whipped cream and sprinkle on cinnamon or what ever spice you like. Chill for 1 hour.

Frangelico (Hazelnut liqueur)
Rumple Minze (Peppermint liqueur)
Fireball whisky (cinnamon flavor)
Malibu Rum (Coconut flavor)
Irish Whisky – Jameson or Bushmills, (Irish coffee mousse)
Yes, you are missing something. The zero carb diet is about eating from the animal kingdom. No plant or artificial foods. All animal foods have trace carbs. We do not count the minimal carbs in animal products.
All of your recipes that SAY zero carbs are NOT zero carbs. Some are not even close. I don’t mean to slam or anything, but I am looking for some seriously zero carb dessert OR very low carb. Am I missing something here?
